Cashew Chicken Recipe Review and Word of the Year Update
My family used to enjoy going out to eat. We used to do it once or twice a month. With the kids getting older and having a busier schedule, it was usual for us all have the time, at the same time to sit down and enjoy a meal. Of course we picked restaurants and food we enjoyed, but what we really enjoyed is family time. Family time, looking at the people we love the most in the world and having conversations with them. Conversations were light and whimsical, with out the drugery of cooking and clean up looming over anyone's head.
Over the years we tried many different restaurants, and foods.I remember paying top dollar for meal of spaghetti and meatball, that my child refused to eat. Said child loved spaghetti and meatballs, and of course being a frugal parent, I tried to coax him to eat it. I used his fork to cut the meatball; I could not cut the meatball. I was horrified and needless to say we did not bring the food home. After many of alike experiences, we found a style of restaurant that we all enjoyed and just about any city has at least one. A Chinese buffet, was the answer. My oldest son like the Lo Mein noodles, and teriyaki chicken. My youngest son liked the noodles and the dumplings. My hubby and I like the variety of dishes. All three men loved the ice cream for desert.
The year of 2020 has been full of ups and downs. We have had a ton of family time, which of course makes this mamma's heart full and so happy. But we have also not been able to do many, many things we used to do on a regular basis. One of the things we miss is Chinese Food. We have been experimenting with different recipes. Tonight's dinner was Cashew Chicken using this recipe.
Word of the year update: In my other post I still had not made up my mind on what exactly would be my word of the year. I asked for feedback and received none. After more thought on my part I have decided to go with Follow Through. My hubby and I have been married for 23 years. His favorite Chinese food is Cashew Chicken and he has said many times over the years, we should try making it at home. So this is the first addiction of my Follow Through. Another thing I did today was worked my cleaning zone for the week. I used to do the FlyLady house cleaning method and could never do it all. I am not saying I am doing it FlyLady style, but I am working on my own style/method that will fit my lifestyle, family and home. Today I vacuumed, mopped the kitchen floors. I even pulled out the fridge and stove to do under and behind them.
